High King Highball


  • Raspberries
  • 1/2 oz simple syrup
  • 2 oz Irish whiskey
  • 1/2 oz Aperol
  • 3/4 oz lemon juice
  • 3/4 oz grapefruit juice
  • 1 dash bitters
  • Club soda
  • Ice
  • Lemon slices for garnish


  1. In a cocktail shaker, muddle the raspberries and simple syrup.
  2. Add the whiskey, Aperol, lemon juice, grapefruit juice, and bitters into the shaker with ice
  3. Shake until well-chilled.
  4. Fine-strain into a glass over fresh ice and top with the club soda.
